Ingredients

  • 1 lemon (juice only)
  • 1 tbsp sugar
  • Icing sugar (for dusting)

Instructions

  1. Mix dry ingredients: In a bowl, combine the all-purpose flour, sugar, salt, and poppy seeds. Create a well in the center for the wet ingredients.
  2. Add wet ingredients and whisk: Pour in the egg, milk, and melted butter into the center of the dry ingredients. Whisk starting from the center, gradually incorporating the flour mixture to form a smooth, lump-free batter.
  3. Rest the batter: Cover the batter and refrigerate for 30 minutes to allow the flour to hydrate and bubbles to subside, resulting in tender crêpes.
  4. Cook the crêpes: Heat a non-stick 25cm pan over medium heat and lightly grease it with butter. Pour a ladleful of batter into the pan; immediately tilt and swirl the pan to spread the batter thinly and evenly.
  5. Flip the crêpe: When the edges turn golden and lift easily from the pan, gently loosen a corner with a spatula and carefully flip the crêpe using your hands. Cook briefly on the other side until lightly golden.
