Ingredients
Crêpes
- 125 g all purpose flour
- 1 egg
- 1 tbsp sugar
- 1/2 tsp salt
- 300 ml milk (any type)
- 20 g unsalted butter (melted and cooled to room temperature, plus more for cooking)
- 1 tbsp poppy seeds (optional but highly recommended)
Orange and Lemon Sauce
- 2 oranges (juice only)
- 1/2 lemon (zest only)
- 1 lemon (juice only)
- 1 tbsp sugar
- Icing sugar (for dusting)
Instructions
- Mix dry ingredients: In a bowl, combine the all-purpose flour, sugar, salt, and poppy seeds. Create a well in the center for the wet ingredients.
- Add wet ingredients and whisk: Pour in the egg, milk, and melted butter into the center of the dry ingredients. Whisk starting from the center, gradually incorporating the flour mixture to form a smooth, lump-free batter.
- Rest the batter: Cover the batter and refrigerate for 30 minutes to allow the flour to hydrate and bubbles to subside, resulting in tender crêpes.
- Cook the crêpes: Heat a non-stick 25cm pan over medium heat and lightly grease it with butter. Pour a ladleful of batter into the pan; immediately tilt and swirl the pan to spread the batter thinly and evenly.
- Flip the crêpe: When the edges turn golden and lift easily from the pan, gently loosen a corner with a spatula and carefully flip the crêpe using your hands. Cook briefly on the other side until lightly golden.
- Prepare citrus sauce: In a small pot, combine orange juice, lemon juice, lemon zest, and sugar. Bring to a boil over medium heat, stirring occasionally, and reduce until the sauce thickens slightly and becomes syrupy.
- Serve: Spoon the warm orange and lemon sauce over the cooked crêpes and dust with icing sugar. Serve immediately for best flavor and texture.
Notes
- For even more flavor, allow the batter to rest overnight in the fridge.
- You can substitute milk with almond or oat milk for a dairy-free version.
- Adjust the sugar amount in the sauce to your taste preference.
- Poppy seeds add a crunchy texture but can be omitted if desired.
- Use a thin spatula or your fingers to flip the crêpes carefully to avoid tearing.
