Instructions
- Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until the mixture is fully combined and smooth.
- Add Eggs: Incorporate the eggs into the butter and sugar mixture, mixing well until the dough becomes fluffy and lighter in texture.
- Add Lemon Flavor: Mix in the lemon juice and lemon zest thoroughly until evenly distributed throughout the dough.
- Add Baking Powder: Stir in the baking powder to help the cookies rise and become light.
- Add Flour: Gradually mix in the all-purpose flour, about one-third at a time, ensuring each addition is fully incorporated before adding the next.
- Color the Dough: Divide the dough evenly into four portions. Use Wilton Color Right Food Coloring to tint each portion in pink, yellow, blue, and purple colors.
- Refrigerate Dough: Wrap the colored dough portions and refrigerate for 2 hours to firm up, making it easier to handle when shaping.
- Shape and Sugar Coat: After chilling, roll the dough from each color into small balls, then roll these balls in powdered sugar to coat evenly.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Place the sugar-coated dough balls on a baking sheet lined with parchment paper, and bake for 8-10 minutes until the cookies have spread slightly and cracked on top, creating the signature crinkle effect.
