  • ⅛ cup fresh chopped cilantro

Instructions

  1. Heat the oil: Add the oil to a large skillet and heat it over medium-high heat until shimmering.
  2. Prepare chicken: If your chicken breasts are thick, slice them horizontally to create thinner cutlets to ensure faster and even cooking.
  3. Sauté the chicken: Place the chicken breasts in the hot skillet. Season the side facing up with salt, garlic powder, and black pepper. Cook for about 3 to 4 minutes per side, until each side is browned and the chicken is cooked through or nearly done.
  4. Remove chicken: Take the chicken out of the skillet and set it aside on a plate. Reduce the heat to medium.
  5. Make the sauce: Pour chicken stock, lime juice, and coconut milk into the skillet. Stir to combine, scraping any browned bits from the pan. Add minced garlic, salt, and pepper. Keep some coconut milk in the can to drizzle later.
