4.1 from 1 review

Louisiana Voodoo Fries are a deliciously spicy and creamy twist on classic fries, featuring crispy baked or air-fried French fries smothered in a rich Cajun ranch cheese sauce. The sauce combines buttery roux, milk, ranch seasoning, white cheddar cheese, and a kick of cayenne pepper for a perfect balance of creamy, cheesy, and bold flavors. This dish makes an ideal appetizer or snack for gatherings or game day.

  • Total Time: 23 minutes
  • Yield: 6 servings

Ingredients

Fries

  • 26 ounces frozen French fries (or homemade fries)

Cajun Ranch Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper (or black pepper)
  • 2 teaspoons ranch seasoning powder (or more, to taste)
  • 1/2 teaspoon cayenne powder, divided
  • 8 ounces white cheddar cheese, shredded (about 2 cups)

Instructions

  1. Preheat the Oven or Air Fryer: Heat your oven or air fryer to 400°F to prepare for cooking the fries.
  2. Cook the Fries: Arrange the frozen fries in a single layer on a large rimmed baking sheet or in the air fryer basket. Bake or air fry according to package or device instructions until fries are cooked through and golden brown.
  3. Make the Roux: In a 2-quart saucepan over medium heat, melt and bubble the butter. Whisk in the flour and cook for about 2 minutes until the mixture turns thick and pasty, forming a roux.
  4. Add Milk and Seasonings: Gradually whisk in milk in 1/2 cup increments, stirring to keep the sauce smooth. Add salt, white or black pepper, ranch seasoning powder, and half of the cayenne powder. Stir to combine thoroughly.
  5. Simmer Sauce: Reduce heat to medium-low and cook the sauce for about 5 minutes, stirring frequently, until it thickens enough to coat the back of a spoon.
  6. Add Cheese: Stir in the shredded white cheddar cheese gently using a silicone spoon. Continue cooking and stirring occasionally for 2 to 3 minutes until the sauce becomes thick, creamy, and smooth. Remove from heat.
  7. Serve: Spread the cooked fries on a serving platter, pour the warm Cajun ranch cheese sauce evenly over the top, and sprinkle the remaining cayenne powder for extra spice. Serve immediately while warm.

Notes

  • You can substitute frozen fries for homemade fries for a fresher taste.
  • Adjust the amount of cayenne powder to control the heat level to your preference.
  • Ranch seasoning powder can be found at most grocery stores or made at home from dried herbs and spices.
  • Use white cheddar for a milder, creamier sauce; sharp cheddar can also work for stronger flavor.
  • Ensure to cook the sauce gently to avoid curdling or burning the cheese.
