Ingredients
Chia Pudding Base
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or milk of choice)
- 2 tablespoons pure maple syrup
- 1/2 teaspoon vanilla extract
Berry Mixture
- 1/2 cup fresh or frozen raspberries
Toppings
- Sliced almonds or chopped nuts
- Shredded coconut
- Additional raspberries or mixed berries
- Extra drizzle of maple syrup
Instructions
- Mix the Ingredients: In a medium mixing bowl, whisk together chia seeds, almond milk, maple syrup, and vanilla extract until the mixture is well combined and smooth.
- Stir After 5 Minutes: Let the mixture sit for 5 minutes, then stir again thoroughly to prevent clumping of the chia seeds.
- Mash the Raspberries: Gently mash the fresh or frozen raspberries with a fork to release their juices, then fold them into the chia seed mixture to infuse a natural berry flavor.
- Alternative – Blend for Smoothness: For a smoother texture, blend the raspberries before mixing them into the chia pudding base.
- Let It Set: Cover the bowl or transfer the pudding to an airtight container and refrigerate for at least 2 hours or overnight to allow the chia seeds to absorb the liquid and thicken the mixture.
- Adjust Consistency: If the pudding becomes too thick after chilling, stir in a splash of almond milk or your preferred milk to loosen the texture before serving.
- Serve and Enjoy: Stir the thickened pudding well, divide it into serving cups, and top with sliced almonds or chopped nuts, shredded coconut, additional fresh berries, and a drizzle of maple syrup. For added texture, layer with granola or yogurt if desired.
Notes
- Use any milk of choice such as oat, soy, or cow’s milk to suit dietary preferences.
- Maple syrup adds natural sweetness and can be adjusted to taste or substituted with honey for variation.
- Prepare the pudding the night before for a quick and easy breakfast option.
- Chilling time is important for chia seeds to absorb the liquid and achieve the pudding-like consistency.
- For extra protein, try topping with Greek yogurt or adding a scoop of protein powder to the base.
