Delicious and creamy Rice Krispies Treats with a rich cheesecake layer topped with fresh mixed berries. This no-bake dessert combines the classic crispy rice cereal and marshmallow base with a smooth, tangy cream cheese topping, making it a perfect treat for parties or any sweet craving.

  • Total Time: 20 minutes plus chilling time
  • Yield: 16 servings

Ingredients

Rice Krispies Base

  • 3 Tbsp butter
  • 3 cups (142g) mini marshmallows
  • 4 cups (125g) Rice Krispies cereal

Cheesecake Layer

  • 1 Tbsp envelope gelatin powder
  • 16 oz (2 packages/250g each) cream cheese (softened)
  • 1 cup (120g) powdered sugar
  • 1 cup (255g) sour cream
  • 1/2 tsp vanilla extract

Garnish

  • 2 cups mixed raspberries and blueberries

Instructions

  1. Prepare Pan: Line a 9-inch square pan with foil and lightly coat it with cooking spray to prevent sticking.
  2. Melt Butter and Marshmallows: In a large saucepan over medium heat, melt the butter. Add the mini marshmallows and stir continuously until they are completely melted and combined.
  3. Mix Cereal: Add the Rice Krispies cereal to the melted marshmallow mixture and stir until all the cereal is thoroughly coated.
  4. Form Base Layer: Spoon the mixture into the prepared pan and press it down evenly to create a flat, uniform layer. Place the pan in the refrigerator to cool while making the cheesecake layer.
  5. Soften Gelatin: Combine the gelatin powder with 3 tablespoons of water in a small microwave-safe bowl and allow it to soften.
  6. Beat Cream Cheese and Sugar: Using an electric mixer, beat the softened cream cheese with the powdered sugar until smooth and creamy.
  7. Add Sour Cream and Vanilla: Mix in the sour cream and vanilla extract until fully incorporated into the cream cheese mixture.
  8. Incorporate Gelatin: Microwave the softened gelatin for 15-30 seconds until melted, then add it to the cream cheese mixture. Blend everything until smooth and well combined. Pour this cheesecake layer over the chilled rice cereal base and smooth the surface evenly.
  9. Chill: Cover loosely with plastic wrap or foil and refrigerate for a minimum of 2 hours, or preferably overnight, to allow the cheesecake layer to set firmly.
  10. Serve: Cut the dessert into 16 squares and garnish each piece with fresh mixed raspberries and blueberries before serving.

Notes

  • Make sure the cream cheese is softened for easier mixing and smoother texture.
  • Chilling overnight improves the firmness and flavor development.
  • You can substitute gelatin with a vegetarian alternative if desired.
  • Use fresh berries for the best garnish or substitute with other fruit if preferred.
  • Line the pan with foil for easy removal and cleaner slicing.
