Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish or similar sized casserole dish to ensure the dip does not stick.
- Cook the Meat: In a large skillet over medium heat, cook the ground beef with diced onion and minced garlic. Stir frequently and cook until the beef is browned and fully cooked through, about 7-8 minutes. Drain any excess grease to keep the dip from being oily.
- Mix in Creaminess: Reduce the heat to low and add the softened cream cheese and sour cream to the skillet. Stir continuously until the cream cheese melts and the mixture becomes smooth and well combined with the meat and onions.
- Add Flavors: Stir in the drained diced tomatoes with green chilies, refried beans, chili powder, cumin, salt, and black pepper. Mix thoroughly so all ingredients are evenly blended, creating a rich and flavorful base for your dip.
- Bake: Transfer the entire mixture into the prepared baking dish. Evenly sprinkle the shredded cheddar cheese on top. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and slightly golden around the edges.
- Garnish and Serve: Remove the dip from the oven and sprinkle chopped green onions over the hot dip for a fresh and mild onion flavor. Serve immediately alongside tortilla chips for dipping.
