This Mediterranean One Pot Pasta recipe is a quick, flavorful, and gluten-free meal that combines wholesome ingredients like fire-roasted tomatoes, artichoke hearts, black olives, and fresh thyme. Cooked all in one pot, it creates a delicious and comforting sauce as the pasta cooks, minimizing cleanup while maximizing taste. Perfect for a busy weeknight, it can be garnished with parmesan and basil for an extra burst of flavor.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Primary Ingredients

  • 1 (8 ounce) gluten free pasta (corn/quinoa or chickpea/lentil)
  • 3 cups water (boiling)
  • 1 can vegetable broth
  • 1 can fire roasted tomatoes
  • 1 can artichoke hearts (drained)
  • 1 cup black olives
  • 1/2 purple onion (sliced)
  • 2 tablespoons fresh thyme (or substitute 1 teaspoon dried thyme)
  • 1 teaspoon cumin
  • Sea salt and black pepper (to taste)

Optional Garnishes

  • Parmesan cheese
  • Fresh basil

Instructions

  1. Boil Liquid and Add Ingredients: Bring 3 cups of water to a boil in a large pot. Once boiling, add the gluten-free pasta, vegetable broth, sliced purple onions, fire roasted tomatoes, drained artichoke hearts, black olives, fresh thyme, and cumin to the pot.
  2. Return to Boil: Allow the mixture to come back to a boil over high heat. Stir the pasta as it begins to cook to ensure ingredients are well combined.
  3. Simmer and Stir: Maintain the pasta at a boil but reduce the heat slightly. Occasionally stir the pasta using tongs to prevent it from sticking together or to the bottom of the pot.
  4. Adjust Sauce Consistency: As the water reduces and thickens into a sauce, monitor the pasta’s doneness. If the sauce becomes too thick before the pasta is fully cooked, thin it by adding hot water in 1/2 cup increments as needed.
  5. Season: Once the sauce has reduced adequately and the pasta is nearly cooked, season with sea salt and black pepper to your taste.
  6. Serve: When the pasta is cooked through, promptly remove it from the pot and plate it to avoid overcooking in the broth.
  7. Garnish and Enjoy: Garnish the pasta with fresh basil leaves and parmesan cheese if desired. Serve immediately for the best flavor and texture.

Notes

  • Use gluten-free pasta varieties such as corn/quinoa or chickpea/lentil for dietary preferences.
  • If fresh thyme is unavailable, use dried thyme but reduce the quantity to 1 teaspoon.
  • Adding hot water during cooking helps adjust the sauce consistency as the pasta cooks.
  • Serve immediately to prevent the pasta from becoming mushy in the broth.
  • Parmesan cheese and fresh basil are optional but add great flavor and freshness.
