- 2 tablespoons avocado oil
- 1 pound potatoes, cut into 1/2 inch cubes
- 1 pound lean ground beef
- 1/2 cup diced yellow onion
- 1 red bell pepper, diced

- 4 ounces diced green chiles
- 2 1/2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 cup cilantro, chopped
- 1/2 cup shredded cheese
Instructions
- Heat the oil: Heat the avocado oil in a large skillet over medium-high heat. Once hot, swirl the oil to coat the bottom evenly and reduce the heat to medium.
- Cook the potatoes: Add the cubed potatoes to the skillet. Stir often and cook for about 6 minutes until the potatoes begin to turn golden and start to become tender, but still firm.
- Add and cook the beef and vegetables: Push the potatoes to one side of the skillet. Add the ground beef, breaking it up as you cook. Add the diced onion and red bell pepper. Season with salt and pepper and continue cooking until the beef is browned and cooked through, and the vegetables are softened.
- Incorporate spices and cilantro: Stir in the diced green chiles, chili powder, cumin, smoked paprika, and chopped cilantro. Combine everything well and cook for an additional 6-8 minutes until the potatoes are fully tender and flavors meld together.
- Season and add cheese: Taste and adjust seasoning if needed by adding more salt or pepper. Sprinkle the shredded cheese on top and cook for another minute until the cheese is melted.
- Garnish and serve: Optionally garnish with extra chopped cilantro. Serve the skillet dish hot and enjoy.
Notes
- For a spicier dish, add jalapeños or more chili powder.
- Use any cheese that melts well, such as cheddar or Monterey Jack.
- You can substitute red bell pepper with green or yellow bell pepper based on availability.
- For a lower-fat option, use lean ground turkey or chicken instead of beef.
- If potatoes are not cubed evenly, cooking time may vary slightly; ensure they are tender before proceeding.
