Ingredients
Vegetables and Herbs
- 1 pound mushrooms (cremini, button, or a mix), sliced
- 4 cups fresh spinach
- 4 cloves garlic, minced
- Optional garnish: fresh parsley or red pepper flakes
Other Ingredients
- 2 tablespoons olive oil
- 1 tablespoon lemon juice, freshly squeezed
- Salt and pepper, to taste
Instructions
- Prepare Ingredients: Wash the mushrooms thoroughly and pat them dry with a paper towel. Slice them evenly to ensure even cooking. Clean the spinach and set aside. Mince the garlic and juice the lemon.
- Heat Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Sauté Mushrooms: Add the sliced mushrooms to the skillet. Stir occasionally for 5–7 minutes until the mushrooms soften and turn a deep brown color, developing rich flavor.
- Add Garlic: When mushrooms are almost fully browned, add the minced garlic. Sauté for 1–2 minutes while stirring constantly, ensuring the garlic becomes fragrant but does not burn.
- Add Spinach: Add the fresh spinach to the skillet. Toss gently to combine it with the mushrooms and garlic so it wilts evenly.
- Season and Finish: Season with salt and pepper to taste, then add the tablespoon of fresh lemon juice. Toss everything together to blend the flavors thoroughly.
Notes
- You can use any mushroom variety, but cremini provides a firmer texture and richer flavor.
- For extra flavor, garnish with fresh parsley or sprinkle with red pepper flakes for a spicy kick.
- This dish is perfect as a side or can be added to pasta, grains, or omelets for a nutritious boost.
