Potatoes
- 500g Jersey Royal potatoes, cleaned
- 1 sprig rosemary, finely chopped
- 2 cloves garlic, bashed
- 2 tbsp olive oil
- Sea salt flakes, to taste
Chilli Crab Salsa
- ½ round shallot, finely chopped
- 1 red chilli, finely chopped
- 100g white crab meat
- 2 tbsp extra-virgin olive oil
- ½ lime, juiced
- ½ small bunch coriander, finely chopped

Instructions
- Prepare Potatoes: Preheat your oven to 200°C (fan 180°C/gas mark 6). In a small roasting tin, toss together the cleaned Jersey Royal potatoes, chopped rosemary, bashed garlic, olive oil, and seasoning with sea salt flakes. Ensure the potatoes are evenly coated.
- Roast Potatoes: Place the roasting tin in the oven and roast the potatoes for 50 minutes to 1 hour until they are golden-tinged, the skins are lightly wrinkled, and they feel tender when pressed with a fork.
- Make Chilli Crab Salsa: While the potatoes roast, combine the finely chopped shallot, red chilli, white crab meat, extra-virgin olive oil, lime juice, and chopped coriander in a bowl. Stir everything together well, seasoning to taste with sea salt. Adjust the olive oil or lime juice if necessary to balance the flavors.
- Assemble and Serve: Once the potatoes are roasted, season them again lightly with sea salt. Spoon the chilli crab salsa over the hot potatoes directly in the tin. Serve immediately with fresh rocket salad on the side, which can be tossed with the potatoes at the table for an added peppery crunch.
