Crust
- 1.5 cups almond flour
- 1/3 cup almond butter
- 1/3 cup salted butter, melted

Cheesecake Filling
- 1/2 cup Joy Filled Eats Sweetener (or alternatives)
- 1-2 tablespoons gelatin
- 8 oz cream cheese
- 1 cup cottage cheese
- 1/4 cup sour cream
- 1/2 teaspoon vanilla extract
- 3 cups mixed berries (1 cup frozen raspberries, 1 cup fresh blueberries, 1 cup fresh sliced strawberries)
- Additional berries for garnish (optional)
Instructions
- Prepare Crust: Combine the almond flour, almond butter, melted salted butter, and 1/3 cup sweetener to create the no-bake crust. Press the mixture firmly into the base of your serving pan and set aside.
- Soft-Set Cheesecake Filling: Process 1/2 cup sweetener and 2 tablespoons gelatin in a food processor until well combined. Add cream cheese and cottage cheese, blending until smooth. Add sour cream and vanilla extract and pulse to combine. Scrape down the sides as needed.
- Fold in Berries: Turn off the food processor and gently fold in the mixed berries to the cream cheese mixture, maintaining their texture.
- Assemble and Chill: Spoon the mixture evenly over the prepared crust. Add extra berries on top if desired. Refrigerate for at least four hours to set before serving.
- Firmer-Set Cheesecake Variation: Bloom 1 tablespoon gelatin in 2 tablespoons cold water and let it sit for 5 minutes. Add 1/4 cup very hot water and stir until dissolved, straining out lumps. Blend cream cheese and cottage cheese until smooth in food processor, then add sour cream and vanilla. Incorporate the bloomed gelatin and blend again until smooth.
- Fold Berries and Chill Firm Version: Turn off the food processor and fold in the berries gently. Spread the mixture over the prepared crust and top with berries if preferred. Refrigerate for at least four hours to firm up before serving.
