This Orange Pistachio Cake is a moist and flavorful dessert featuring whole boiled oranges blended into the batter, combined with almond flour and ground pistachios for a nutty texture. Sweetened naturally with honey and enhanced with a homemade orange glaze, this cake offers a delightful citrus twist perfect for any occasion.

  • Total Time: 2 hours 20 minutes
  • Yield: 10 servings

Ingredients

Cake Batter

  • 2 cups almond flour
  • 2 whole oranges
  • ⅔ cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract

Orange Glaze

  • 2 tablespoons honey
  • ½ cup fresh orange juice

Instructions

  1. Boil Oranges: Rinse the oranges thoroughly under running water, then place them whole into a pot. Add enough water to cover the oranges completely and simmer gently for 1 hour to soften and infuse the citrus flavor.
  2. Blend Oranges: Drain the boiled oranges and transfer them to a blender. Blend until you achieve a velvety smooth texture, which will form the base of the cake batter.
  3. Get the Oven Ready: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan to prevent the batter from sticking during baking.
  4. Stir the Batter: In a large mixing bowl, combine the blended oranges, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract. Mix well until the batter is smooth and uniformly combined.
  5. Bake It: Pour the batter into the prepared springform pan. Bake for approximately 1 hour, checking periodically. If the top begins to brown too quickly, loosely cover with foil. The cake is done when a toothpick inserted into the center comes out clean.
  6. Cook the Glaze: In a small pot, combine the honey and fresh orange juice. Bring to a boil, then reduce heat and simmer until the mixture reduces to about half its original volume. Remove from heat and let it cool.
  7. Glaze and Serve: When the cake has cooled enough to handle but still slightly warm, brush the orange glaze evenly over the top. Allow the cake to cool completely before removing it from the pan and serving.

Notes

  • Use whole oranges with thin skins for best results and less bitterness.
  • The glaze adds moisture and a glossy finish; do not skip it.
  • Store the cake in an airtight container to maintain freshness for up to 3 days.
  • For a more intense orange flavor, consider adding a teaspoon of orange zest to the batter.
  • This cake is naturally gluten-free due to the use of almond flour.
