Vegetables and Frying
- 2 cups olive oil (for frying, varies depending on pan size)
- 4 potatoes
- 4 zucchini
- 4 eggplants
Cheese
- 200 grams Kefalograviera cheese, finely shredded (substitutes: parmesan, kasseri, or pecorino)
- 250 grams Kefalograviera cheese, finely shredded (for bechamel and topping)
Meat Sauce
- 2 tablespoons olive oil
- 1 large red onion, finely chopped
- 1 medium-sized garlic bulb, minced
- 1 kg beef mince meat
- 1 cup red wine
- 800 grams crushed canned tomatoes
- 1 tablespoon salt
- ½ tablespoon salt (split between meat sauce and vegetable seasoning)
- ½ tablespoon black pepper (split)
- ½ teaspoon white pepper
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 teaspoons sugar
- ½ teaspoon thyme
- 1 teaspoon oregano
- 3 bay leaves
- 1 bunch fresh parsley, finely chopped
Bechamel Sauce
- 150 grams unsalted butter
- 1 cup plain flour
- 1 litre milk
- 2 egg yolks (reserve whites for other uses)
- ½ teaspoon nutmeg
Instructions
- Prepare the Vegetable Base: Slice the potatoes, zucchini, and eggplants into circular disks, about 1/4-inch thick to ensure even cooking and frying.
- Fry Vegetables: Heat the olive oil in a pan over medium-high heat. Fry the vegetable slices in batches until cooked through and golden brown on both sides. Drain on paper towels or wire racks to remove excess oil, ensuring they remain crisp and not oily.
- Cook the Meat Sauce: In a large pot over high heat, warm the olive oil and sauté the chopped onion and minced garlic until soft and translucent. Add the beef mince, cooking until browned, breaking it into small pieces for even cooking.
- Deglaze and Simmer Meat: Pour in the red wine and let it reduce for about 3 minutes. Stir in crushed tomatoes, season with salt, white pepper, cinnamon, nutmeg, sugar, thyme, oregano, bay leaves, and parsley. Bring to a simmer, reduce heat, and cook for 10 minutes to meld flavors. Remove bay leaves before assembly.
- Make the Bechamel Sauce: In a separate saucepan over medium heat, melt the butter. Gradually whisk in the flour to form a smooth paste (roux). Slowly pour in the milk while stirring constantly to avoid lumps, cooking until the sauce thickens and becomes creamy.
- Finish Bechamel: Remove from heat, stir in egg yolks, nutmeg, and shredded cheese until fully incorporated and smooth.
- Preheat Oven: Set the oven to 165°C (fan-forced) to prepare for baking the assembled dish.
- Assemble Moussaka: In a baking dish, arrange a single layer of potato slices. Season with salt and pepper, and sprinkle some cheese on top. Next, add a layer of eggplant slices, season and sprinkle cheese. Follow with a layer of zucchini, season and cheese. Add a second eggplant layer, season, and cheese again.
- Add Meat and Bechamel: Pour the prepared meat sauce evenly over the layered vegetables, smoothing the surface. Finally, spread the creamy bechamel sauce evenly over the meat sauce layer to cover completely.
- Bake: Place the assembled moussaka in the preheated oven and bake for 40 minutes, or until the top is golden brown and bubbling. Start checking at 30 minutes to prevent overbaking.
- Rest and Serve: Remove the moussaka from the oven and allow it to cool and set for at least 30 minutes before slicing. This resting time helps the layers firm up for cleaner servings. Cut into portions, serve warm, and enjoy!

- Use a wire rack to drain fried vegetables if you want less oily slices.
