Oven Baked Tomatoes is a simple and flavorful side dish featuring ripe tomatoes topped with a savory mixture of homemade breadcrumbs, Parmesan cheese, garlic, fresh herbs, and olive oil. Baked until golden and fragrant, this dish is perfect for a quick addition to any meal, offering a delightful balance of textures and fresh, vibrant flavors.

  • Total Time: 20 minutes
  • Yield: 6 servings

Ingredients

Tomatoes

  • 3 large ripe tomatoes, halved

Breadcrumb Topping

  • 1 slice bread (or ¾ cup fresh bread crumbs)
  • ¼ cup shredded Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 3 tablespoons fresh herbs (parsley, basil, and oregano) or ½ teaspoon each dried basil & dill
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) to ensure it reaches the right temperature for baking the tomatoes evenly.
  2. Prepare Breadcrumbs: Using a blender, food processor, or Magic Bullet, pulse the bread slice into fresh breadcrumbs. This usually takes just about 1 second.
  3. Mix Topping: In a small bowl, combine the freshly made breadcrumbs, shredded Parmesan cheese, minced garlic, olive oil, fresh or dried herbs, salt, and pepper. Toss the mixture until all ingredients are evenly combined.
  4. Assemble Tomatoes: Place the halved tomatoes cut side up in a shallow baking dish. Lightly season with salt and pepper, then evenly sprinkle the breadcrumb mixture on top of each tomato half.
  5. Bake: Place the baking dish in the preheated oven and bake for 10 to 15 minutes, or until the breadcrumb topping is lightly browned and crispy. Monitor carefully to avoid overbaking, which can make the tomatoes mushy.

Notes

  • Use very ripe tomatoes for the best flavor and texture.
  • Fresh herbs can be substituted with dried if fresh are not available.
  • To make this gluten-free, substitute the bread with gluten-free bread.
  • You can add a pinch of red pepper flakes to the breadcrumb topping for a spicy kick.
  • Serve warm as a side dish or appetizer.
