- 1 ½ cup Quick-Cooking Oats
- ½ cup Raw Cashews
- 2 tsp Poppy Seeds

Wet Ingredients
- 2 tbsp Cashew Butter
- ¼ cup Real Maple Syrup
- Juice and Zest of 1 Lemon
- 1 tsp Vanilla Extract
Instructions
- Grind Oats and Cashews: Add the quick-cooking oats to a blender or food processor and process until they turn into a fine flour. Then add the raw cashews and pulse until they are finely ground, creating a flour-like texture.
- Combine Remaining Ingredients: Add cashew butter, real maple syrup, lemon juice and zest, vanilla extract, and a pinch of salt to the blender with the oat and cashew mixture. Pulse or process until a thick, uniform dough forms. Next, either pulse in the poppy seeds to evenly combine, or transfer the dough to a bowl and fold in the poppy seeds by hand.
- Form Energy Bites: Using a 2-tablespoon scoop, portion out the dough and roll each portion between your hands to form smooth, even balls.
- Store and Serve: Place the energy bites in the refrigerator where they will keep fresh for up to 10 days. Alternatively, store in the freezer for up to one month. If frozen, allow to thaw for 5–10 minutes before enjoying.
Notes
- Use real maple syrup for the best natural sweetness and flavor. Honey or agave syrup can be used as alternatives but adjust sweetness to taste.
- Feel free to substitute cashew butter with almond or peanut butter if preferred.
- These bites do not require baking or cooking, making them a perfect no-cook recipe.
