Ingredients

For the Pastries and Filling

  • Non-stick baking spray
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg, separated into yolk and egg white
  • 2 tablespoons lime juice (from 1 lime), divided
  • 1 pinch vanilla bean powder or 1/2 teaspoon vanilla extract
  • 1 teaspoon water
  • 1-2 tablespoons white flour, for dusting
  • 1 lb puff pastry (2 sheets), thawed but cold
  • 1 cup fresh mulberries, divided

For the Glaze

  • 3/4 cup powdered sugar

Instructions

  1. Prepare Oven and Baking Sheets: Preheat your oven to 400°F (200°C). Spray a large baking sheet or two smaller ones generously with non-stick baking spray to prevent sticking.
  2. Make Cream Cheese Filling: Using a stand mixer or hand mixer, whisk together the softened cream cheese, 1/4 cup sugar, the egg yolk (reserve the egg white for the wash), 1 teaspoon lime juice, and a pinch of vanilla bean powder until the mixture is smooth and creamy.
  3. Prepare Egg White Wash: In a small bowl, whisk together the reserved egg white with 1 teaspoon water until beaten evenly. This will be used to glaze the pastry edges.
  4. Cut and Fill Puff Pastry: Lightly dust your work surface with flour. Unfold one sheet of puff pastry carefully over the flour (keep the other sheet refrigerated). Cut the dough into 9 equal squares. Spoon about 1 tablespoon of the cream cheese mixture into the center of each square, gently spreading it flat with the back of a spoon.
  5. Shape Danishes and Add Fruit: Fold the corners of each puff pastry square inward to form an octagon shape. Place 5 to 6 fresh mulberries in the center on top of the cream cheese. Brush the exposed pastry dough edges lightly with the prepared egg white wash to ensure a golden finish.
  6. Bake the Danishes: Carefully transfer each danish onto the prepared baking sheet(s). Bake in the preheated oven for 17 to 21 minutes or until the puff pastry is puffed, golden brown, and the cream cheese filling is set.
  7. Prepare the Glaze and Drizzle: While the danishes bake, whisk together the remaining 1 to 1 1/2 tablespoons lime juice and 3/4 cup powdered sugar until smooth in a small bowl. Divide the glaze into two bowls. In one bowl, mash 3 to 4 mulberries with your fingers or between spoons to create a pink colored glaze. Drizzle both the white and pink glazes over the warm danishes once they come out of the oven.
