Instructions

  1. Prepare the truffle mixture: Place almond butter, pumpkin puree, melted coconut butter, maple syrup, and pumpkin pie spice into the bowl of a food processor. Process until smooth, stopping occasionally to scrape down the sides to ensure an even blend.
  2. Add coconut flour: Stop the processor and add coconut flour. Process again until a soft dough forms. If the dough feels too sticky, incorporate 1-2 teaspoons more coconut flour until it reaches a workable consistency.
  3. Form truffle balls: Roll the dough between your palms to create 12 equal-sized balls. Arrange them on a plate and freeze for at least 30 minutes to firm up.
  4. Melt the chocolate coating: Place dark chocolate chips and coconut oil in a heatproof glass bowl over a pan of simmering water (double boiler). Stir occasionally until the chocolate is completely melted and smooth.
  5. Dip the truffles: Use a fork or wooden skewer to dip each truffle into the melted chocolate, ensuring all sides are evenly coated. Optionally, sprinkle with chopped almonds, sea salt, or pumpkin pie spice while the coating is still wet.
