Ingredients
Batter:
- 1 cup pumpkin puree (canned or homemade)
- 2 large eggs
- 1 cup milk (or a non-dairy alternative)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 2 tablespoons brown sugar (optional, for sweetness)
French Toast:
- 4 slices of thick bread (like brioche or challah)
- Butter or oil for cooking
Toppings & Serving:
- Maple syrup, for serving
- Powdered sugar, for garnish (optional)
- Chopped pecans or walnuts (optional, for topping)
- Whipped cream (optional, for garnish)
- Crispy bacon or sausage (optional, for serving)
Instructions
- Prepare the Pumpkin Batter: In a large mixing bowl, combine the pumpkin puree, eggs, and milk. Whisk the ingredients until the mixture is smooth. Add the vanilla extract, ground cinnamon, ground nutmeg, ground ginger, salt, and brown sugar (if using). Whisk again thoroughly to combine all the flavors. Allow the batter to rest for a few minutes so the spices can meld together.
- Preheat the Cooking Surface: Warm a large skillet or griddle over medium heat. Add a tablespoon of butter or oil to coat the cooking surface evenly to prevent sticking and add flavor.
- Soak the Bread: Dip each slice of thick bread into the pumpkin batter, allowing it to soak briefly on each side so the bread absorbs the flavorful mixture without becoming too soggy.
- Cook the French Toast: Place the soaked bread slices onto the hot skillet. Cook each slice for 3-4 minutes on one side until it turns golden brown. Flip the slices and cook for an additional 3-4 minutes on the other side. Repeat this process for all slices, adding more butter or oil to the skillet as needed.
- Plate and Garnish: Stack two slices of French toast on each plate. Drizzle generously with maple syrup and, if desired, sprinkle with powdered sugar. Add chopped pecans or walnuts on top for a crunchy texture.
- Add Optional Toppings: For a more festive touch, add a dollop of whipped cream on top of the French toast. Serve alongside crispy bacon or sausage to balance the sweetness with a savory contrast.
- Store Leftover Batter: If there is any leftover pumpkin batter, store it in an airtight container in the refrigerator for up to 2 days. Stir well before using it again for best results.
Notes
- Use thick sliced bread like brioche or challah for best texture and flavor.
- Adjust the level of brown sugar based on your preferred sweetness.
- Non-dairy milk alternatives such as almond, oat, or soy milk work well in the batter.
- Ensure your skillet is at medium heat to avoid burning while achieving a golden crust.
- Add nuts and whipped cream just before serving to maintain their texture.
