Ingredients
Ice Cream Base
- 2 scoops white chocolate raspberry protein powder
- 1.5 cups filtered milk (or milk of choice)
- 1/2 teaspoon xanthan gum (2 grams)
- 10 drops liquid stevia (to taste)
Mix-Ins
- 5 squares white chocolate bar, chopped (20 grams)
- Handful raspberries (45 grams)
Instructions
- Combine Ingredients: Add the protein powder, filtered milk, xanthan gum, and liquid stevia into the Ninja Creami ice cream container. Use an immersion blender to thoroughly blend the ingredients together until smooth.
- Freeze Mixture: Seal the container with its lid and place it upright on a flat surface in the freezer. Freeze for at least 24 hours to ensure the mixture solidifies properly.
- Prepare for Processing: After freezing, remove the lid from the container and insert it into the outer bowl. Secure the blade lid on top until it clicks into place.
- Process Ice Cream: Insert the assembled bowl into the Ninja Creami machine and select the Light Ice Cream mode to process the mixture into creamy ice cream.
- Respin if Needed: If the ice cream texture is powdery or not creamy enough, place the lid back on and select the Respin option to improve consistency.
- Create Center Hole: Using a spoon or spatula, make a hole in the center of the ice cream by pushing the ice cream aside to create space for mix-ins.
- Add Mix-Ins: Add the chopped white chocolate squares and fresh raspberries into the hole you created. Secure the lid and select the Mix-In mode to incorporate them evenly throughout the ice cream.
- Serve and Enjoy: Once the mixing process is complete, serve the ice cream immediately or store it in the freezer until ready to enjoy.
Notes
- You can substitute filtered milk with any milk of choice like almond, oat, or coconut milk for a different flavor or dietary preference.
- Adjust the amount of liquid stevia to your preferred sweetness level.
- If you don’t have a Ninja Creami, this recipe can be adapted for an ice cream maker or frozen and stirred periodically.
- Xanthan gum helps to improve texture and prevent ice crystals; do not skip for best results.
- The protein powder flavor is key; choose a high-quality white chocolate raspberry protein powder to maximize taste.
