  • Total Time: 2 hours 20 minutes
  • Yield: 35 servings

Ingredients

White Chocolate Ganache

  • 340 g white chocolate chips (12 oz)
  • 190 ml double cream (¾ cup, heavy cream)
  • 1 ½ cups freeze dried raspberries, blended into a powder and seeds sieved out (40 g, 6 tablespoons of powder)
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Dark Chocolate Coating and Decoration

  • 200 g dark chocolate (60-70% cocoa solids) (7 oz)
  • Cacao nibs, chopped pistachios, or freeze dried raspberries for decorating

Instructions

  1. Prepare Raspberry Powder: Add the freeze dried raspberries to a blender or food processor and blend into a fine powder. Use a fine sieve to remove the seeds, ensuring a smooth powder without raspberry seeds.
  2. Melt White Chocolate: Finely chop the white chocolate and place it in a heatproof bowl. Melt it gently over a pan of simmering water or in the microwave using 30-second bursts, stirring occasionally until smooth.
  3. Heat Cream: In a small saucepan, heat the double cream over gentle heat until it is almost boiling, then remove from heat immediately.
  4. Make Ganache: Pour the hot cream over the melted white chocolate and stir until a smooth, glossy white chocolate ganache forms.
  5. Add Flavorings: Stir in the vanilla extract, the sifted freeze dried raspberry powder, and a pinch of salt until the ganache turns vivid pink and is completely smooth.
  6. Chill Mixture: Allow the ganache mixture to cool, then place it in the refrigerator to set for at least one hour or overnight for best results.
  7. Roll Truffles: Remove the mixture from the fridge 30 minutes before shaping. Using a tablespoon, scoop portions and roll them between your hands to form smooth balls. Clean your hands regularly to prevent sticking. Place the formed truffles on a lined baking sheet and chill again to firm up.
  8. Melt Dark Chocolate: Finely chop the dark chocolate and melt it gently over a simmering water bath, stirring occasionally. Remove from heat once smooth. Avoid overheating to prevent burning.
  9. Dip Truffles: Using a fork, dip each chilled truffle into the melted dark chocolate ensuring full coating. Work quickly as the truffles should not melt. If chocolate thickens, gently warm it again to maintain liquidity.
  10. Decorate and Set: Before the chocolate sets, garnish with cacao nibs, chopped pistachios, or extra freeze dried raspberries as desired. Place coated truffles on parchment-lined trays and allow to set at room temperature or in the refrigerator.

Notes

  • Ensure the raspberry powder is fine and seed-free for a smooth texture in the ganache.
  • Do not overheat chocolate during melting to prevent burning or graininess.
  • Allow ganache to chill thoroughly for easier rolling and a better texture.
  • Keep hands clean and cool when rolling truffles to avoid stickiness.
  • If the melted chocolate thickens while dipping, gently reheat it in short bursts.
  • Store finished truffles in an airtight container in the refrigerator for up to one week.
