Ingredients
Meat and Vegetables
- 1 Tbsp olive oil
- 1 lb ground beef (80/20 or 85/15)
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 can black beans, drained and rinsed
- 1 cup corn, rinsed (frozen or canned)
Spices and Seasonings
- 4 Tbsp taco seasoning
- ½ tsp fine sea salt (or to taste)
Other Ingredients
- 10 oz can Rotel Diced Tomatoes and Green Chilis (Original)
- ¾ cup jasmine rice, rinsed and drained
- 2 cups low-sodium chicken stock
- 2 cups Mexican cheese (Colby jack, or equal parts mozzarella and cheddar)
Instructions
- Cook the ground beef: Heat 1 Tbsp olive oil in a large skillet over medium heat. Add the ground beef and sauté, breaking it apart with a spatula, until it is no longer pink, about 3 minutes.
- Sauté onions and garlic: Add diced onion to the skillet and cook until softened, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds until fragrant.
- Add seasoning: Sprinkle in the taco seasoning and stir well to evenly coat the meat and vegetables.
- Add tomatoes, beans, corn, and rice: Pour in the Rotel diced tomatoes and green chilis with their juices, then add the black beans, corn, and rinsed jasmine rice. Stir to combine all ingredients thoroughly.
- Simmer with chicken stock: Pour in 2 cups of low-sodium chicken stock and add sea salt. Bring the mixture to a light boil, then reduce heat to low. Cover the skillet with a tight-fitting lid and let it simmer gently for 15 minutes or until the rice is fully cooked.
- Melt the cheese: Turn off the heat and remove the lid. Sprinkle the Mexican cheese evenly over the top. Cover again and let the skillet rest for 5 minutes to allow the cheese to melt completely.
- Serve and garnish: Garnish with fresh cilantro or your choice of taco toppings before serving for added freshness and flavor.
Notes
- Use low-sodium chicken stock to control salt levels.
- Adjust taco seasoning amount according to your heat preference.
- Can substitute ground turkey or chicken for a leaner option.
- If desired, add chopped fresh cilantro or sliced jalapeños as garnish.
- Make sure to rinse the rice to remove excess starch for fluffier texture.
