Instructions
- Prepare Strawberries: Preheat the oven to 350°F. Place the sliced strawberries and lemon thyme sprigs on a baking sheet lined with parchment paper. Drizzle the strawberries with honey to enhance their natural sweetness.
- Roast Strawberries: Roast the strawberries for 20 minutes until they soften and release their juices, creating a syrupy consistency. Remove the baking sheet from the oven and allow the berries to cool slightly.
- Toast the Baguette: During the last 8 to 10 minutes of roasting the strawberries, line a separate small baking sheet with parchment paper and arrange the gluten-free baguette slices in a single layer. Brush each slice lightly with extra virgin olive oil and bake until golden brown and crisp.
- Whip the Ricotta: Using a food processor, whip the room temperature Kite Hill Ricotta Alternative on high speed until it becomes smooth and velvety, perfect for spreading.
- Assemble Crostini: Once the roasted strawberries have cooled slightly, top each toasted baguette slice with a generous layer of whipped ricotta. Add roasted strawberries on top, drizzle with some of the strawberry syrup, balsamic vinegar, and a little extra honey for an added touch of sweetness and tang. Serve immediately.
