Roasted Strawberry Crostini is a delightful and elegant appetizer featuring sweet, honey-roasted strawberries atop crispy gluten-free baguette slices, creamy whipped ricotta alternative, and a drizzle of balsamic vinegar. This easy-to-make dish combines fresh flavors and textures, perfect for gatherings or a light snack.

  • Total Time: 30 minutes
  • Yield: 10 servings

Ingredients

Strawberries and Toppings

  • 2 lb. Strawberries, hulled and sliced in half
  • 3 tbsp Beeyond The Hive Raw Clover Honey
  • Fresh Lemon Thyme Sprigs, a handful
  • Balsamic Vinegar (high quality), for drizzling

Bread and Cheese

  • 1 Gluten-Free Baguette, sliced at a diagonal
  • 2 8 oz containers Kite Hill Ricotta Alternative (room temperature), whipped
  • Extra Virgin Olive Oil, for coating the bread

Instructions

  1. Prepare Strawberries: Preheat the oven to 350°F. Place the sliced strawberries and lemon thyme sprigs on a baking sheet lined with parchment paper. Drizzle the strawberries with honey to enhance their natural sweetness.
  2. Roast Strawberries: Roast the strawberries for 20 minutes until they soften and release their juices, creating a syrupy consistency. Remove the baking sheet from the oven and allow the berries to cool slightly.
  3. Toast the Baguette: During the last 8 to 10 minutes of roasting the strawberries, line a separate small baking sheet with parchment paper and arrange the gluten-free baguette slices in a single layer. Brush each slice lightly with extra virgin olive oil and bake until golden brown and crisp.
  4. Whip the Ricotta: Using a food processor, whip the room temperature Kite Hill Ricotta Alternative on high speed until it becomes smooth and velvety, perfect for spreading.
  5. Assemble Crostini: Once the roasted strawberries have cooled slightly, top each toasted baguette slice with a generous layer of whipped ricotta. Add roasted strawberries on top, drizzle with some of the strawberry syrup, balsamic vinegar, and a little extra honey for an added touch of sweetness and tang. Serve immediately.

Notes

  • Use room temperature ricotta alternative for easier whipping and better texture.
  • Gluten-free baguette ensures this recipe is suitable for gluten-sensitive individuals.
  • Adjust honey and balsamic vinegar quantities to taste for sweetness and acidity balance.
  • Serve crostini immediately after assembly to maintain crispness of bread.
  • Fresh lemon thyme adds a subtle citrus herb flavor but can be substituted with fresh thyme or omitted if unavailable.
