Instructions
- Prepare the cucumbers: Mix the diced cucumber with salt in a bowl and let it sit for 10 minutes to release excess moisture. This step ensures your salad is not watery.
- Make the yogurt mixture: In a separate bowl, combine the Greek yogurt, crumbled feta cheese, chopped herbs, grated lemon peel, fresh lemon juice, and black pepper. Stir well to blend the flavors.
- Combine cucumbers and yogurt mixture: Drain the cucumbers thoroughly and pat them dry with a paper towel to remove any leftover moisture. Then stir the cucumbers into the yogurt mixture until evenly coated.
- Assemble the sandwiches: Lay out the slices of whole-grain bread. Place a layer of alfalfa sprouts on one slice of each sandwich, spread the cucumber-yogurt mixture evenly over the sprouts, add the thin slices of red onion on top, and then cover with the second slice of bread.
- Serve: Cut the sandwiches in half diagonally or straight down the middle as preferred and serve immediately for the freshest taste.
