A hearty and delicious Sausage Breakfast Casserole featuring crispy tater tots, savory breakfast sausage, and a blend of melted cheddar and mozzarella cheeses all baked in a rich, seasoned egg custard. Perfect for a weekend brunch or a comforting breakfast gathering.

  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings

Ingredients

Sausage and Cheese

  • 2 lb hot breakfast sausage
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Tater Tots

  • 1 (30-32 oz) bag frozen tater tots

Egg Mixture

  • 8 large eggs
  • 2 cups milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) and lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Cook Sausage: In a large skillet over medium heat, cook the hot breakfast sausage until it is browned and no longer pink, breaking it apart as it cooks. Drain the excess fat carefully.
  3. Combine Ingredients: In a large mixing bowl, toss together the frozen tater tots, cooked sausage, shredded cheddar cheese, and shredded mozzarella cheese until evenly combined. Transfer this mixture into the prepared 9×13-inch baking dish and spread it out evenly.
  4. Prepare Egg Mixture: In another bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until the mixture is smooth and well blended.
  5. Assemble Casserole: Pour the egg mixture evenly over the tater tot and sausage mixture in the baking dish, ensuring it is fully submerged and spread out.
  6. Optional Refrigeration: At this point, you can cover the dish and refrigerate it if you plan to bake it later, which allows flavors to meld.
  7. Bake: Bake the casserole uncovered in the preheated oven for 60 to 70 minutes, or until the eggs are fully set and the top is golden brown. A knife inserted in the center should come out clean.

Notes

  • You can refrigerate the assembled casserole for up to 24 hours before baking for convenience.
  • Allow the casserole to rest for 5-10 minutes after baking for easier slicing.
  • Feel free to substitute hot breakfast sausage with mild sausage or turkey sausage if preferred.
  • For a cheesier casserole, add extra shredded cheese on top before baking.
  • Make sure to drain the sausage fat thoroughly to avoid a greasy casserole.
