Instructions
- Heat the skillet: Preheat a large skillet over medium-high heat to ensure even cooking when adding the ingredients.
- Melt butter and olive oil: Add 1 tablespoon of butter and 1 tablespoon of olive oil to the skillet, heating until the butter has fully melted and the mixture is hot.
- Add aromatics and orzo: Stir in the chopped onion, garlic, and uncooked orzo pasta. Cook for 3-4 minutes, stirring frequently, until the onion becomes translucent and the orzo is lightly toasted for enhanced flavor.
- Pour in chicken broth and season: Add 2 cups of chicken stock along with 1/2 teaspoon of salt and 1/4 teaspoon of ground pepper to the skillet, stirring to combine.
- Simmer the orzo: Reduce heat to medium and cover the skillet. Let it cook for about 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.
- Add shrimp and vegetables: Mix in the shrimp, lemon juice from half a lemon, frozen peas, and dried basil. Cook for an additional 5-6 minutes, stirring occasionally, until the shrimp are pink and cooked through and the peas are warmed.
- Incorporate Parmesan cheese: Stir in 1/2 cup of grated Parmesan cheese until fully combined and melted, adding creaminess and flavor.
- Garnish and serve: Plate the dish and garnish with lemon slices and additional Parmesan cheese as desired for a fresh and zesty finishing touch.
