Ingredients
Rice
- 2 cups sushi rice (uncooked)
- 2.5 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
Salmon Topping
- 1 lb fresh salmon fillet (skinless and diced)
- 1/2 cup mayonnaise
- 2 tablespoons Sriracha sauce (or to taste)
- 1 teaspoon sesame oil
- 1/2 cup green onions (chopped, plus extra for garnish)
Garnish
- 1 sheet nori (cut into small strips)
- Tobiko (to taste, optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sushi layered dish.
- Cook Rice: Rinse the sushi rice thoroughly under cold water until the water runs clear, then combine with 2.5 cups of water in a rice cooker or pot and cook until tender and fully absorbed.
- Season Rice: In a bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fluff it with a fork and gently fold in the vinegar mixture to season the rice evenly.
- Layer Rice: Spread the seasoned sushi rice evenly at the bottom of a baking dish and allow it to cool slightly to prevent overcooking during baking.
- Prepare Salmon Mixture: In another bowl, combine diced salmon, mayonnaise, Sriracha sauce, sesame oil, and chopped green onions. Mix until well blended, adjusting the spiciness to your preference.
- Assemble Bake: Spread the prepared salmon mixture evenly over the layer of sushi rice in the baking dish, ensuring full coverage.
- Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the salmon is fully cooked and the top is slightly golden and bubbly.
- Garnish: Remove the dish from the oven and let it cool for a few minutes. Garnish with additional chopped green onions, nori strips, and tobiko if desired to enhance flavor and presentation.
- Serve: Serve the sushi bake warm by scooping out portions with a spoon and enjoy this comforting, spicy twist on sushi flavors.
Notes
- Ensure the salmon is fresh and diced uniformly for even cooking.
- You can adjust the Sriracha quantity according to your preferred spice level.
- Using a rice cooker makes cooking sushi rice easier and more consistent.
- Letting the rice cool slightly before adding the salmon topping helps maintain texture.
- Optional tobiko adds a nice pop of color and flavor but can be omitted.
