This Slow Cooker Beef Roast recipe delivers tender, flavorful beef cooked with hearty vegetables and a rich homemade gravy. Using a combination of steak and Italian seasonings, the chuck or rump roast slowly simmers with carrots, potatoes, onions, and celery for a comforting meal perfect for family dinners. The convenient slow cooker method ensures a hands-off cooking experience, while the cornstarch-thickened gravy adds a delicious finishing touch.

  • Total Time: 6 hours 15 minutes
  • Yield: 8 servings

Ingredients

Meat and Seasoning

  • 3 pounds chuck or rump roast
  • 2 tablespoons steak seasoning
  • 1 tablespoon Italian seasoning

Vegetables

  • 1 pound baby carrots
  • 2 pounds potatoes (red preferred), chopped into 2 inch pieces
  • 1 large white or yellow onion, cut into chunks
  • 1 stalk celery, chopped

Liquids

  • 2 cups beef broth

Gravy Ingredients

  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 3 tablespoons cold water
  • 3 tablespoons corn starch

Instructions

  1. Season the Roast: Whisk together the steak seasoning and Italian seasoning in a small bowl. Rub this seasoning mixture all over the surface of the beef roast to evenly coat it and infuse flavors.
  2. Prepare the Slow Cooker: Lightly grease the inside of the slow cooker to prevent sticking. Place the seasoned roast inside, then add the beef broth, chopped potatoes, baby carrots, onion chunks, and chopped celery around the roast.
  3. Cook the Roast: Cover the slow cooker and cook on low heat for 9 hours or on high heat for 6 hours until the roast is tender and the vegetables are cooked through.
  4. Make the Gravy: Just before serving, drain the cooking liquid from the slow cooker into a medium saucepan. Add salt, black pepper, garlic powder, and onion powder to the liquid. Bring it to a boil over medium heat.
  5. Thicken the Gravy: In a separate small bowl, whisk together cornstarch and cold water until smooth. Gradually pour this mixture into the boiling sauce while stirring. Lower heat to medium-low and cook for 3-5 minutes until the gravy thickens to a desired consistency.
  6. Serve: Transfer the cooked roast to a large serving platter. Use a fork to gently pull apart the meat into chunks or slices. Pour the thickened gravy over the roast and vegetables, then serve warm and enjoy your hearty meal.

Notes

  • Use red potatoes for best texture and flavor, but other potato varieties also work.
  • Adjust the seasoning to taste depending on the saltiness of your steak seasoning and broth.
  • To keep the roast intact, slice instead of shredding if desired.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • This recipe works well with chuck roast but can be adapted for rump roast or other similar beef cuts.
