This Slow Cooker Parmesan Garlic Chicken and Potatoes is a comforting and flavorful one-pot meal perfect for busy weeknights. Tender bite-sized chicken breasts and quartered Yukon gold potatoes are slow-cooked in a savory parmesan garlic sauce seasoned with Italian herbs, resulting in a creamy, cheesy dish bursting with rich flavors.

  • Total Time: 3 hours 30 minutes to 5 hours 15 minutes
  • Yield: 6 servings

Ingredients

Chicken and Potatoes

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 pounds Yukon gold potatoes, quartered
  • 1 tablespoon dried Italian seasoning

Sauce and Seasoning

  • 1 (12-ounce) bottle parmesan garlic sauce
  • ½ cup chicken broth
  • 1 cup grated parmesan cheese

Optional Garnish

  • Fresh chopped parsley
  • Additional grated parmesan cheese

Instructions

  1. Prepare the Slow Cooker: Spray the inside of the slow cooker with non-stick cooking spray to prevent sticking and facilitate easy cleanup.
  2. Add Potatoes: Place the 2 pounds of quartered Yukon gold potatoes evenly at the bottom of the slow cooker as the base layer.
  3. Prepare Chicken: Cut the boneless skinless chicken breasts into bite-sized 1-inch pieces to ensure even cooking.
  4. Layer Chicken and Seasoning: Add the chicken pieces on top of the potatoes, then sprinkle 1 tablespoon of dried Italian seasoning evenly over the chicken and potatoes.
  5. Add Sauce and Broth: Pour the entire 12-ounce bottle of parmesan garlic sauce along with ½ cup of chicken broth over the chicken and potatoes.
  6. Add Parmesan Cheese: Sprinkle 1 cup of grated parmesan cheese over the top to enhance the cheesy flavor and create a creamy texture as it cooks.
  7. Combine and Cook: Stir all the ingredients gently to combine them without disturbing the layers too much. Cover the slow cooker with its lid.
  8. Slow Cook: Cook on LOW for 4-5 hours or on HIGH for 3-4 hours, until the chicken is tender and the potatoes are fully cooked.
  9. Garnish and Serve: Once cooked, garnish the dish with freshly chopped parsley and additional parmesan cheese if desired to add freshness and extra flavor before serving.

Notes

  • Yukon gold potatoes work well due to their creamy texture but red or baby potatoes can be substituted.
  • The parmesan garlic sauce adds rich flavor, but you can use a homemade version if preferred.
  • For best results, cut chicken and potatoes into even sizes to ensure even cooking.
  • Check the slow cooker towards the end of cooking to avoid overcooking, as slow cooker temperatures may vary.
  • Serve with a side of steamed vegetables or a fresh green salad for a complete meal.
