Ingredients
Chips
- 500 g potatoes (peeled and chipped)
- ½ tbsp rapeseed oil (or a good spray of frylight for low fat chips)
- ½ tbsp smoked paprika
- ¼ tsp sea salt
- ⅛ tsp ground black pepper
Toppings
- 1 tbsp lighter mayonnaise (thinned out with 1 tbsp water or used as is with 2 tbsp)
- 60 g cheese (grated)
- 2 spring onions (sliced)
- 1 slice cooked ham (cut into squares)
Instructions
- Preheat Oven: Preheat your oven to 240°C (gas mark 9) and line a large baking tray with a silicone mat to prevent sticking. No need to turn the chips while baking, thanks to the mat.
- Prepare Potatoes: After chipping your potatoes, rinse them in a colander under cold running water to remove excess starch. Shake off any extra moisture.
- Parcook Potatoes: Transfer the rinsed potatoes to a microwave-safe bowl and microwave for 5 minutes to soften slightly before baking.
- Coat and Season: Place the microwaved chips in a Tupperware container with rapeseed oil and seasoning (smoked paprika, sea salt, black pepper). Securely close and shake vigorously to coat evenly and roughen the surface for crispiness. If no container is available, use a sturdy food bag to shake.
- Bake Chips: Spread the coated chips evenly on the prepared baking tray. Bake in the preheated oven for 15 minutes. For extra crispiness, bake for an additional 5 minutes if desired.
- Add Toppings and Final Bake: Transfer baked chips to a baking dish. Sprinkle grated cheese, diced cooked ham, sliced spring onions, and dollops of lighter mayonnaise on top. Add a final sprinkle of smoked paprika and bake for 5 minutes until cheese melts and toppings warm through. Serve immediately.
Notes
- Using a silicone mat prevents the chips from sticking and eliminates the need to turn them during baking.
- Thinning the lighter mayonnaise with water helps create a lighter topping that distributes more evenly.
- Microwaving the chips before baking helps achieve a crispy exterior while keeping the inside soft.
- For lower fat, use spray oil like Frylight in place of rapeseed oil.
- If you prefer saltier chips, adjust sea salt quantities to taste.
- Feel free to substitute cooked ham for a vegetarian alternative if desired.
