Instructions

  1. Prepare Yeast: In a stand mixer bowl, combine the warm water, active dry yeast, and sugar. Allow the mixture to sit until it becomes foamy, about 5 minutes, indicating the yeast is activated.
  2. Make Dough: Add garlic salt, olive oil, and sourdough discard to the yeast mixture. Gradually mix in the all-purpose flour using the dough hook attachment on low speed until the dough is smooth and elastic, approximately 4 minutes.
  3. First Rise: Transfer the dough to a bowl, cover with plastic wrap, and let it rise in a warm spot for 20 minutes to allow it to develop and expand.
  4. Shape Dough: Roll the dough out into a rectangle on a floured surface. Transfer it carefully to a greased 13×18 inch baking sheet, pressing the dough evenly into the corners.
  5. Add Toppings: Brush the dough surface with melted butter. In a small bowl, combine the garlic powder, dried parsley, dried oregano, Italian seasoning, salt, and black pepper, then sprinkle this mixture evenly over the dough. Top with shredded mozzarella and grated parmesan cheeses.
  6. Second Rise: Allow the dough to rise again for 15 minutes while preheating your oven to 400°F (204°C).
