Ingredients
Main Ingredients
- 1 1/2 cups sourdough starter (or discard)
- 1 1/2 cups all-purpose flour
- 6 tbsp unsalted butter (room temperature)
- 1/2 tsp sea salt
Optional Toppings
- Herbs (such as rosemary, thyme, or oregano – quantity to your preference)
- Additional sea salt for sprinkling
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking the crackers.
- Mix Dough: In a mixing bowl, combine the sourdough starter, all-purpose flour, softened butter, sea salt, and your choice of herbs. Mix thoroughly until the ingredients join into a sticky dough.
- Roll Dough: Divide the dough into two equal portions. Place one portion between two sheets of parchment paper and roll it out evenly to about 1/8-inch thickness. Repeat with the second portion.
- Score Crackers: Remove the top parchment sheet from the rolled dough. Using a pizza cutter or a sharp knife, score the dough into squares or your preferred cracker shapes to make it easier to break after baking.
- Add Toppings: Lightly sprinkle the surface with any optional toppings such as extra sea salt or herbs, pressing them gently into the dough so they adhere during baking.
- Bake: Place the baking sheets in the oven and bake for 20 to 25 minutes until the crackers turn golden and crisp. Rotate the pans halfway through baking for even cooking.
- Cool: Remove the crackers from the oven and allow them to cool completely on a wire rack. Cooling is essential as the crackers will crisp up further once cooled.
- Store: Once fully cooled, break the crackers along the scored lines and store them in an airtight container to keep them fresh and crunchy.
Notes
- You can customize the crackers by adding your favorite herbs or seeds before baking for extra flavor and texture.
- Ensure the dough is rolled evenly to prevent uneven baking.
- Store crackers in an airtight container at room temperature for up to one week.
- If you don’t have sourdough starter, discards from feeding your starter work perfectly in this recipe.
- For thinner, crispier crackers, roll the dough slightly thinner than 1/8-inch.
