Ingredients
Marinade
- ¼ cup brown sugar
- 3 Tbsp soy sauce
- 2 garlic cloves, minced
- 1 Tbsp fresh ginger, grated
- Black pepper, freshly cracked (about 15 cranks)
- 1 Tbsp cooking oil
Chicken
- 8 boneless, skinless chicken thighs (about 1.75 lbs total)
- ½ Tbsp cooking oil (for cooking)
Garnish
- 2 green onions, sliced
- 1 tsp sesame seeds
Instructions
- Make the marinade: Mince the garlic and grate the ginger finely. In a small bowl, combine brown sugar, soy sauce, minced garlic, grated ginger, freshly cracked black pepper, and 1 tablespoon of cooking oil, stirring well until the sugar dissolves.
- Marinate: Place the chicken thighs in a shallow dish or gallon zip-lock bag. Pour the marinade over the chicken and turn to coat evenly. Cover and refrigerate for at least 30 minutes, preferably up to a day for maximum flavor penetration.
- Heat the skillet: When ready to cook, heat a large skillet over medium flame. Add ½ tablespoon cooking oil and swirl to coat the skillet evenly.
- Cook the chicken: Add half of the marinated chicken pieces to the skillet and cook until well browned on both sides and cooked through, about 5-7 minutes per side depending on thickness. Remove cooked chicken to a clean plate and repeat with the second batch.
- Reduce the marinade to a glaze: Pour the leftover marinade into the hot skillet. Bring it to a boil, whisking constantly to dissolve any browned bits stuck to the pan. Let it boil until it thickens into a glossy glaze, about 3-5 minutes.
- Coat the chicken: Turn off the heat, return all the cooked chicken pieces to the skillet, and spoon or dredge them thoroughly in the thick soy glaze.
- Garnish and serve: Sprinkle with sliced green onions and sesame seeds before serving for added crunch and flavor.
Notes
- Marinate the chicken for at least 30 minutes, but longer (up to 24 hours) will deepen the flavor.
- Use boneless, skinless chicken thighs for juicier results; chicken breasts can be substituted but may be less tender.
- Whisk the marinade while boiling to prevent burning and ensure a smooth glaze.
- Adjust black pepper amount to taste to control the spice level.
