This Spicy Chicken Sandwich recipe features crispy air-fried chicken breasts coated in a flavorful spicy batter and crunchy panko breadcrumbs. Finished with a homemade spicy mayo and served on soft hamburger buns, it’s a quick and delicious meal perfect for lunch or dinner.

  • Total Time: 26 minutes
  • Yield: 4 servings

Ingredients

Chicken and Coating

  • 4 Hamburger Buns
  • 2 Boneless Skinless Chicken Breasts
  • 1 cup Panko Breadcrumbs
  • 2 tablespoons Olive Oil
  • 1 Large Egg
  • 1 tablespoon All-Purpose Flour
  • 2 tablespoons Hot Sauce (Frank’s Red Hot Sauce recommended)
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper

Spicy Mayo

  • 1 tablespoon Hot Sauce
  • ¼ cup Mayonnaise

Instructions

  1. Prepare Breadcrumbs: In a shallow bowl, combine the panko breadcrumbs and olive oil. Stir until the breadcrumbs are evenly coated. Microwave the mixture for 1-2 minutes until lightly browned. Set aside to cool completely.
  2. Make Batter: In another shallow bowl, whisk together the egg, flour, 2 tablespoons hot sauce, garlic powder, salt, and black pepper to create a flavorful batter.
  3. Tenderize Chicken: Cover the chicken breasts with plastic wrap and gently tenderize them using a meat mallet until evenly flattened. Cut each breast in half crosswise to create four thinner pieces.
  4. Coat Chicken: Dip each piece of chicken into the batter, ensuring it is fully coated, then press it into the cooled panko breadcrumbs to adhere the crust.
  5. Air Fry Chicken: Spray the bottom of an air fryer basket with nonstick cooking spray. Arrange the chicken pieces in a single layer without overlapping. Set the air fryer to 400°F (204°C) and cook for 12-16 minutes, flipping the chicken halfway through. If the breadcrumbs appear dry during cooking, lightly spray them with additional cooking spray to maintain crispiness.
  6. Make Spicy Mayo: While the chicken cooks, combine 1 tablespoon hot sauce and ¼ cup mayonnaise in a small bowl and mix well to create a spicy mayo spread.
  7. Assemble Sandwiches: Spread the spicy mayo on the top halves of the hamburger buns. Place the crispy chicken pieces on the bottom buns and add your favorite toppings if desired. Top with the spicy mayo-covered buns and serve immediately.

Notes

  • For extra crispy chicken, ensure the panko crumbs are well coated with olive oil before air frying.
  • Adjust the amount of hot sauce in the batter and mayo to suit your preferred spice level.
  • You can add toppings like lettuce, tomato slices, and pickles for added flavor and texture.
  • Cooking times may vary depending on the air fryer model; ensure chicken reaches an internal temperature of 165°F (74°C).
  • If you don’t have an air fryer, you can bake the chicken in an oven preheated to 425°F (220°C) for 20-25 minutes, flipping halfway through.
