Instructions
- Prep the chicken: Cut the chicken into 1 to 1.5-inch chunks. Pat the pieces dry to remove excess moisture. Season the chicken evenly with salt, black pepper, garlic powder, and smoked paprika, then toss in olive oil to coat thoroughly.
- Make the sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, and rice vinegar until the mixture is smooth and creamy. Taste and adjust the spiciness or sweetness to your preference.
- Assemble the skewers: Thread the seasoned chicken pieces onto the skewers, ensuring they are distributed evenly. You can alternate with vegetables if desired, but this recipe focuses on chicken only.
- Grill the chicken: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally to ensure even cooking and a slight char on all sides. The chicken should be fully cooked with an internal temperature of 165°F (74°C).
- Add the sauce: During the last few minutes of grilling, brush the skewers generously with the bang bang sauce. Alternatively, after removing the skewers from the grill, drizzle the sauce over them for maximum flavor.
- Serve immediately: Garnish the skewers with chopped green onions and sesame seeds for a fresh and nutty finish. Serve any additional sauce on the side for dipping.
