Ingredients
Salmon
- 24 oz salmon (cut into 4 portions)
Dairy & Sauce
- 1 cup 2% milk
- 1 tbsp cornstarch
- 2 tbsp butter
- 1/2 cup parmesan cheese (fresh grated)
Vegetables & Herbs
- 2 cloves garlic
- 2 cup spinach (fresh & chopped)
- 1 cup tomatoes (cherry, sliced in half)
- 1/4 cup sun-dried tomatoes
Oils & Seasonings
- 1 tsp olive oil
- 1 tsp salt (pink Himalayan)
- 1/2 tsp black pepper (ground)
Pasta
- 1 serving pasta (Barilla protein +)
Instructions
- Preheat Pan: Pre-heat a nonstick pan on medium heat to prepare for sautéing the salmon.
- Prepare Salmon: Cut the large 12oz salmon portions in half to make 4 equal servings.
- Sauté the Salmon: Lightly spray the heated pan with olive oil and place the salmon fillets skin side down. Sprinkle with salt and pepper. Sauté for 5 minutes until the skin is golden brown.
- Cook Salmon Further: Flip the salmon, remove the skin if desired, and sauté for an additional 2 minutes with the lid on to ensure even cooking.
- Finish Cooking Salmon: If skin was removed, flip salmon once more and sauté for 1 more minute with the lid on, then remove from pan, place on a plate, and cover with foil to keep warm.
- Start Tuscan Sauce: Reduce heat to low. Add the garlic butter left in the pan from the salmon, or 2 tablespoons of fresh butter, along with 2 chopped garlic cloves. Let the butter melt and garlic soften.
- Prepare Slurry: In a small bowl, whisk together 1 tbsp milk and 1 tbsp cornstarch to create a slurry.
- Make Creamy Sauce: Add the remaining milk to the pan and whisk in the cornstarch slurry. Stir continuously until the sauce thickens slightly (about 1-2 minutes).
- Add Cheese and Seasoning: Stir in the grated parmesan cheese, pink Himalayan salt, and black pepper until the cheese is fully incorporated and the sauce is smooth.
- Add Vegetables: Add the sliced cherry tomatoes, chopped spinach, and sun-dried tomatoes to the sauce. Cook until the spinach wilts and tomatoes soften.
- Combine Salmon and Sauce: Return the cooked salmon to the pan with the Tuscan sauce and vegetables. Gently spoon sauce over salmon to coat and heat through briefly before serving.
Notes
- You can remove the salmon skin if preferred, but it adds a nice crispy texture when left on.
- Barilla Protein+ pasta is used for added protein, but any favorite pasta can be substituted.
- Use pink Himalayan salt for a healthier alternative to regular table salt.
- Ensure to whisk the cornstarch slurry well before adding to avoid lumps in the sauce.
- Covering the salmon while cooking helps retain moisture and results in tender fillets.
