Ingredients
For the Rice Layer
- 1.5 cups uncooked short-grain rice (or 4 cups / 800 g cooked short-grain rice)
- 1 tbsp rice vinegar (or apple cider vinegar or white vinegar)
- 2 tsp white granulated sugar
- 1/2 tsp salt
- 1 tsp vegetable oil (or any neutral oil, for greasing the baking dish)
- 1 tsp sesame seeds (optional)
- 1 tbsp furikake (optional)
For the Spicy Tuna Layer
- 15.87 oz canned tuna in oil (or canned tuna in water or canned salmon, 3 x 5.29 oz / 150 g cans)
- 4-5 tbsp Japanese mayo (or regular mayo)
- 1-2 tbsp sriracha
- 1/4 tsp salt
For the Toppings
- 4 medium avocado (ripe)
- 2-3 tbsp Japanese mayo (or regular mayo)
- 2-3 tbsp sriracha
- 10 sheets nori (cut in half to make 20 sheets)
- 1 green onion (finely chopped for garnishing)
Instructions
- Prepare Baking Dish: Evenly grease a 9 x 9-inch baking dish with vegetable oil or any neutral oil using a paper towel to prevent sticking.
- Cook Rice: Cook the short-grain rice according to the package instructions, either using a rice cooker or stovetop method, until fluffy and fully cooked.
- Preheat Oven: Set the oven to broil at 500 degrees Fahrenheit to prepare for baking the sushi bake.
- Season Rice: Transfer the hot cooked rice to a large bowl. Add salt, sugar, and rice vinegar, then mix well with a rice paddle or wooden spoon. Spread the seasoned rice evenly and firmly into the greased baking dish.
- Add Toppings to Rice: Sprinkle sesame seeds and furikake evenly over the seasoned rice layer for added flavor and texture.
- Make Spicy Tuna Mixture: Open canned tuna and drain excess liquid using a fine sieve and fork. In a medium bowl, combine the drained tuna with Japanese mayo, sriracha sauce, and salt. Mix until well incorporated, then evenly spread this spicy tuna mixture over the rice layer.
- Prepare Avocado: Peel and thinly slice ripe avocados. Layer the avocado slices evenly over the spicy tuna layer in the baking dish.
- Drizzle Sauce: Generously drizzle Japanese mayo and sriracha sauce over the avocado to add creaminess and spice.
- Broil: Place the baking dish in the preheated oven and broil for 10 minutes, or until the sauce is bubbling and has turned golden brown.
- Garnish and Serve: Remove the dish from the oven, sprinkle finely chopped green onions on top, and let it cool slightly. Slice the sushi bake with a wet knife into 20 pieces. Scoop a portion of the mix onto small nori sheets and enjoy your sushi bake!
Notes
- If you do not have a rice cooker, cook the rice on the stovetop by bringing water and rice to a boil, then simmering on low heat covered until water is absorbed (about 15 minutes).
- Use Japanese mayo like Kewpie for authentic flavor, but regular mayo works well too.
- Adjust the amount of sriracha sauce to control the spice level.
- For a lower fat version, opt for tuna canned in water instead of oil and reduce mayo quantity.
- Using a wet knife when slicing prevents the rice from sticking and helps in clean cuts.
- Furikake adds a great umami flavor but is optional if unavailable.
