A hearty and satisfying squash pasta dish featuring roasted butternut squash, savory crumbled sausage, and a creamy spinach sauce, all tossed with bow tie pasta for a perfect balance of flavors and textures.

  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings

Ingredients

Roasted Butternut Squash

  • 2 cups butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Sausage

  • 1/2 lb sausage, crumbled, without casings
  • 1 tablespoon olive oil

Creamy Spinach Sauce

  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 6 oz spinach
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese, shredded
  • 1/4 teaspoon salt (adjust as needed)

Pasta

  • 8 oz farfalle (bow tie pasta)

Instructions

  1. Roast Butternut Squash: Preheat the oven to 400°F. In a large bowl, toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread the squash evenly on a parchment-lined baking sheet without overcrowding. Roast for 30 minutes until tender and lightly caramelized. Remove from oven.
  2. Cook Sausage: While the squash is roasting, heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the crumbled sausage and cook for about 10 minutes, stirring regularly, until fully cooked. Remove from heat and set aside.
  3. Make Creamy Sauce: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and spinach. Cook, stirring occasionally for 5 to 7 minutes, until the spinach wilts. Pour in the heavy cream and bring it briefly to a boil, then reduce heat to a simmer. Stir in the shredded Parmesan cheese continuously until melted and the sauce thickens slightly. Season with about 1/4 teaspoon of salt, adjusting according to the sausage’s saltiness. Remove from heat.
  4. Cook Pasta and Assemble: Cook the farfalle pasta in boiling salted water according to package instructions until al dente (about 7-11 minutes). Drain the pasta well. Add the cooked pasta and sausage to the creamy spinach sauce and stir to combine. Season with salt and pepper if desired. Finally, gently fold in the roasted butternut squash to the pasta mixture. Serve warm.

Notes

  • Adjust salt in the sauce depending on how salty your sausage is.
  • Cook the sausage and make the sauce while the squash is roasting to save time.
  • Using parchment paper helps prevent squash from sticking and makes cleanup easier.
  • Farfallle pasta complements the chunky vegetables and sausage well due to its shape.
