This moist and flavorful banana bread with fresh strawberries adds a delightful twist to a classic favorite. Made with ripe bananas, yogurt, and fresh diced strawberries, this easy-to-make bread combines sweetness and tender crumb with a subtle tang from yogurt. Perfect for breakfast, snack, or dessert, the bread is baked to golden perfection and offers a fresh fruity burst in every bite.

  • Total Time: 1 hour 20 minutes
  • Yield: 10 servings

Ingredients

Dry Ingredients

  • 2 1/2 cups all purpose flour (300 grams)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 4 tablespoons unsalted butter, melted and cooled (56.5 grams)
  • 3/4 cup sugar (148.5 grams)
  • 3/4 cup yogurt (170.25 grams)
  • 2 eggs, beaten
  • 3 very ripe bananas, mashed well
  • 2 teaspoons vanilla extract

Add-ins

  • 1 cup fresh diced strawberries (136.1 grams)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Spray a 9 by 5 inch bread pan with cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt until evenly combined.
  3. Combine Wet Ingredients: In a large bowl, whisk together the melted butter and sugar until smooth. Add yogurt, beaten eggs, mashed bananas, and vanilla extract, mixing well.
  4. Incorporate Dry Ingredients: Gently fold the flour mixture into the wet ingredients until just combined. Be careful not to overmix to ensure a tender crumb.
  5. Add Strawberries: Carefully fold in the diced fresh strawberries, noting the batter will be thick.
  6. Bake the Bread: Pour the batter into the prepared bread pan and bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs (63 minutes is typical).
  7. Cool the Bread: Let the bread cool in the pan for 10 minutes, then remove and transfer to a wire rack. Cool completely for about one hour before slicing.
  8. Storage: Because of the fresh strawberries, store the banana bread in an airtight container and consume within 2 to 3 days for best freshness.

Notes

  • Use very ripe bananas to maximize sweetness and moisture.
  • The yogurt adds moisture and tenderness to the bread; plain or Greek yogurt works well.
  • Fresh strawberries add a fresh fruity flavor but reduce shelf life.
  • Spraying the bread pan helps prevent sticking and makes removal easier.
  • Avoid overmixing the batter to keep the bread light and fluffy.
  • If you prefer, fresh strawberries can be substituted with frozen, but thaw and drain excess moisture before adding.
