Bread
- 1 medium overripe banana
- 2 large eggs
- ¼ cup (59ml) water
- 2 teaspoons vanilla extract (divided)
- ½ cup (119ml) vegetable oil
- ⅓ cup (67g) granulated sugar
- 2 cups (244g) Krusteaz Pancake Mix
- 1 cup (149g) chopped strawberries
Glaze
- ¾ cup (86g) powdered sugar
- ⅛ teaspoon strawberry extract (optional)
- 2-3 tablespoons heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1-2 drops red food coloring (optional)
Instructions
- Prepare the Pan: Preheat the oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick baking spray containing flour or grease and flour the pan to prevent sticking.
- Mash Banana: In a large bowl, mash the overripe banana thoroughly using a fork or potato masher until smooth.
- Combine Wet Ingredients: Add the eggs, water, 1 teaspoon of vanilla extract, and vegetable oil to the mashed banana. Stir well to combine all wet ingredients evenly.
- Add Dry Ingredients: Add the granulated sugar and the pancake mix to the wet mixture. Stir gently until just combined, taking care not to overmix.
- Fold in Strawberries: Gently fold chopped strawberries into the batter to evenly distribute without crushing them.
- Bake Bread: Pour the batter into the prepared loaf pan. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Remove from oven and cool in the pan for 15-20 minutes before transferring to a wire rack to cool completely.
- Make Glaze: Whisk together powdered sugar, the remaining 1/2 teaspoon vanilla extract, strawberry extract (if using), and 2 tablespoons heavy cream. Adjust consistency by adding more cream if needed. If desired, add red food coloring for a pink tint.
- Frost Banana Bread: Once the bread is completely cool, spread the glaze over the top. Note that the frosting will not fully harden but will set with a slight crust on the exterior.
- Storage: Store the frosted bread covered at room temperature for up to 3 days. For longer storage, freeze the bread unfrosted and add glaze after thawing.
