Instructions

- Mash the Banana: In a small bowl, mash the ripe banana until smooth and mostly free of lumps, setting it aside for later mixing.
- Puree Strawberries: Using a food processor or blender, combine the chopped strawberries and the strawberry Jell-O mix. Puree the mixture until completely smooth, then pour it into the bowl with the mashed banana, stirring gently to combine the two fruit mixtures.
- Cream Butter and Sugar: In the bowl of a stand mixer, cream together the softened butter and white sugar until the mixture is light and fluffy, which creates a good texture for the bread.
- Add Eggs and Sour Cream: Beat in the eggs and sour cream to the creamed butter and sugar mixture until all ingredients are well combined and the batter appears smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and baking soda to evenly distribute the leavening agents and salt.
- Combine Fruit Mixture: Add the strawberry and banana puree mixture to the stand mixer bowl with the wet ingredients. Mix on low speed to incorporate without overmixing.
- Add Dry Ingredients: Gradually add the dry flour mixture into the wet ingredients while keeping the mixer on low speed. Mix just until the flour is incorporated to avoid tough bread.
