Ingredients
Wet Ingredients
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 4 tablespoons sour cream
- 1 medium-large banana, mashed well
Strawberry Mixture
- 3-ounce box of strawberry Jell-O mix
- 1/2 pound strawberries, stems removed and chopped
Dry Ingredients
- 1 3/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
Instructions
- Preheat and prepare pan: Preheat the oven to 350°F (175°C) and thoroughly grease a loaf pan to prevent sticking during baking.
- Mash banana: In a small bowl, mash the banana until smooth and set aside for incorporation later.
- Prepare strawberry puree: Using a food processor or blender, combine the chopped strawberries and the strawberry Jell-O mix. Puree the mixture until smooth, then pour it into the bowl with the mashed banana and stir well to combine.
- Cream butter and sugar: In the bowl of a stand mixer, cream together the softened butter and white sugar until the mixture is light and fluffy, creating the base for the batter.
- Add eggs and sour cream: Beat the eggs and sour cream into the butter and sugar mixture until fully combined and smooth, ensuring an even texture throughout the batter.
- Combine dry ingredients: In a separate mixing bowl, whisk together the all-purpose flour, baking powder, salt, and baking soda to evenly distribute the leavening agents and salt.
- Mix in strawberry-banana mixture: Add the strawberry and banana mixture to the stand mixer bowl, mixing on low speed until just combined without overmixing.
- Incorporate dry ingredients: Gradually add the dry ingredient mixture to the wet mixture while the mixer runs on low speed. Mix only until the flour is just incorporated to keep the bread tender.
- Bake the banana bread: Pour the batter into the prepared loaf pan. Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center of the bread comes out clean, signaling that it is fully cooked.
Notes
- Make sure not to overmix the batter once the flour is added to keep the bread light and tender.
- The addition of strawberry Jell-O gives a subtle sweetness and tartness; you can substitute with any other fruit-flavored gelatin if desired.
- Use ripe bananas for maximum flavor and natural sweetness.
- Check for doneness starting at 55 minutes to avoid overbaking, which can dry out the bread.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
