Instructions

- Puree Strawberries and Jell-O: Using a food processor or blender, combine the chopped strawberries with the strawberry Jell-O mix. Puree the mixture until it is smooth, then pour it into the mashed banana bowl and stir to combine well.
- Cream Butter and Sugar: In the bowl of a stand mixer, cream together the softened butter and white sugar until light and fluffy, which helps create a tender texture in the bread.
- Add Eggs and Sour Cream: Beat in the eggs and sour cream to the creamed mixture until fully combined, giving the batter moisture and richness.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and baking soda to ensure even distribution of leavening agents.
- Combine Strawberry Mixture: Add the strawberry and banana puree into the stand mixer bowl and mix on low speed until incorporated.
- Add Dry Ingredients Gradually: With the mixer still on low, slowly add the flour mixture to the wet ingredients, mixing just enough to combine without overmixing, which helps keep the bread tender.
- Bake the Bread: Pour the batter into the prepared loaf pan. Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean. Let it cool before slicing and serving.
