Donut Batter

Strawberry Glaze
- ½ cup fresh strawberries (pureed to your liking)
- 2 cups powdered sugar (add more if needed for thickening)
- 1 tablespoon milk of choice (if needed for thinning)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 400°F (204°C). Lightly spray a donut pan—either one that holds 12 large donuts or 24 small donuts—with non-stick cooking spray to ensure easy release.
- Puree Strawberries for Batter: Pulse 13-15 fresh strawberries in a food processor or blender to create a chunky puree. Avoid over-blending to retain texture. Set aside this strawberry puree for the batter.
- Mix Wet Ingredients: In a large mixing bowl, use an electric mixer to combine 1 tablespoon canola oil, ¾ cup granulated sugar, and 1 large egg on medium-high speed for about 1 minute until fully blended.
- Add Flavorings and Puree: Add 1 teaspoon vanilla extract, ½ cup buttermilk (or milk alternative), and the prepared chunky strawberry puree to the wet ingredients. Mix again until evenly combined.
- Incorporate Dry Ingredients: Add 1 ½ cups all-purpose flour, ½ teaspoon baking soda, 1 teaspoon baking powder, and ¼ teaspoon salt to the mixture. Mix on low speed just until all ingredients are incorporated, taking care not to overmix to keep the cake tender.
- Fill Donut Pan: Transfer the strawberry donut batter into a large piping bag or a freezer bag. Snip off the corner and carefully pipe the batter evenly into the prepared donut pan cavities, leaving space for the donuts to rise during baking.
- Bake Donuts: Place the donut pan on the middle rack of your preheated oven and bake for 8-10 minutes, or until the donuts have risen and a toothpick inserted comes out clean.
- Prepare Strawberry Glaze: While the donuts bake, blend ½ cup fresh strawberries in a food processor or blender until smooth to your preferred consistency, then pour the puree into a small bowl.
- Mix Glaze: Add half of 2 cups powdered sugar to the strawberry puree and mix well. Gradually add the remaining powdered sugar and mix until thick. If the glaze is too thick, add 1 tablespoon milk of choice a little at a time until it reaches a dip-able consistency.
- Glaze Donuts: Once the donuts have cooled completely, dip each donut into the strawberry glaze, then place them on a cooling rack to allow the glaze to set.
