Ingredients
Cookie Dough
- 15.25 ounces strawberry cake mix (1 box)
- 2 large eggs
- 1/3 cup vegetable oil
- 1 cup white chocolate chips (optional, plus extra for decorating)
Instructions
- Get prepped: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or a silicone baking mat to prevent sticking.
- Make the cookie dough: In a large bowl, add the strawberry cake mix. In a separate smaller bowl, whisk together the eggs and vegetable oil until well combined. Pour the egg and oil mixture into the cake mix and stir until a soft dough forms.
- Add chocolate chips: Fold 1 cup of white chocolate chips into the dough, reserving a few to decorate the tops of the cookies after baking.
- Scoop the cookies: Use a small cookie scoop to portion the dough onto the prepared baking sheets, spacing the scoops evenly apart to allow for spreading.
- Bake: Place the baking sheets in the preheated oven and bake for 8 to 10 minutes until the edges of the cookies turn lightly brown and the centers remain soft.
- Decorate: Immediately after removing the cookies from the oven, press the reserved white chocolate chips lightly onto the tops of the cookies.
- Cool: Let the cookies cool on the baking sheets for 5 minutes so they firm up a bit, then transfer them to wire racks to cool completely.
- Devour: Enjoy these soft, sweet, and fluffy strawberry white chocolate chip cookies with your favorite beverage.
Notes
- Be careful not to overbake; cookies should be soft when removed from the oven.
- Using a silicone baking mat helps prevent sticking and promotes even baking.
- Feel free to substitute white chocolate chips with regular chocolate chips or other mix-ins like nuts or dried fruit.
- Store cooled cookies in an airtight container at room temperature for up to 3 days.
- For a dairy-free option, use dairy-free white chocolate chips.
