Filling
- 2 cups Strawberries (fresh or frozen)
- 1/2 cup Granulated sugar (to sweeten)
- 1 teaspoon Lemon juice (to brighten flavor)
- 1 tablespoon Cornstarch (to thicken filling)
- 1/2 teaspoon Cinnamon (adds warmth)
Glaze
- 4 ounces Cream cheese (softened)
- 2 tablespoons Butter (adds richness)
- 1 cup Powdered sugar (sweetens glaze)
- 2 tablespoons Strawberry filling (reserved from filling)
- 1-2 tablespoons Milk or cream (to adjust consistency)
Instructions
- Activate Yeast: In a bowl, combine the warm milk, granulated sugar, and instant yeast. Whisk them together and set aside for about 10 minutes until the mixture becomes foamy, indicating the yeast is active.
- Make Dough: Add melted butter, whole eggs, extra yolk, bread flour, and salt to the yeast mixture. Using a dough hook on medium speed, mix the ingredients for 6-8 minutes until a soft dough forms.
- First Rise: Lightly grease a bowl and place the dough inside. Cover it with a towel and let it rise for about 1 hour or until the dough doubles in size.
- Prepare Filling: In a saucepan over medium heat, combine strawberries, granulated sugar, and lemon juice. Stir occasionally until the strawberries break down and thicken into a jam-like consistency.
- Thicken Filling: Mix cornstarch with 2 tablespoons of water until smooth, then add to the strawberry mixture along with cinnamon. Bring to a low boil, then reduce heat and simmer for 5 minutes. Remove from heat and allow to cool completely.
- Shape Rolls: Once risen, punch down the dough and roll it out on a floured surface into a 15×10-inch rectangle. Spread the cooled strawberry filling evenly over the dough.
- Roll and Cut: Tightly roll the dough into a log and cut into 12 equal pieces. Grease a baking pan and arrange the rolls with some space to allow for rising.
- Second Rise: Cover the rolls and let them rise in the pan for 45 minutes to become puffy.
- Bake: Preheat the oven to 375°F (190°C). Optionally brush the tops of the rolls with cream for extra richness. Bake the rolls for 20-25 minutes or until the internal temperature reaches 190°F (88°C) and the rolls are golden brown.
- Make Glaze: In a bowl, beat softened cream cheese and butter until smooth. Gradually add powdered sugar and 2 tablespoons of reserved strawberry filling. Add milk or cream, 1 tablespoon at a time, to achieve desired glaze consistency.
- Glaze and Serve: Spread the strawberry cream cheese glaze over the warm or cooled rolls and serve immediately for best flavor.

- Use fresh or frozen strawberries depending on availability; fresh delivers better texture.
- Make sure milk is warm, not hot, to properly activate yeast.
- Let rolls cool slightly before glazing to prevent glaze from melting off completely.
