This refreshing Strawberry Milk recipe combines macerated fresh strawberries and a homemade strawberry syrup with unsweetened non-dairy milk for a naturally sweetened, fruity beverage. Perfect for a quick and delicious treat, it balances sweetness with a squeeze of citrus, creating a smooth, creamy strawberry drink with vibrant flavors.

  • Total Time: 15 minutes
  • Yield: 3 servings

Ingredients

Strawberries

  • 1 pound strawberries, finely diced (divided into 2 cups and ¾ cup)

Sugar and Citrus

  • ¼ cup cane or brown sugar (divided: 3 tbsp for syrup, 1 tbsp for macerated strawberries, and remainder for adjustment)
  • 1 large squeeze of lemon juice or lime juice

Milk and Serving

  • 2-3 cups unsweetened non-dairy milk (soy milk recommended)
  • Ice cubes, as needed

Instructions

  1. Macerate Strawberries: Take the ¾ cup of finely diced strawberries and add 1 tablespoon of sugar to them. Stir well to coat and let the mixture sit aside so the strawberries release their juices, becoming soft and juicy.
  2. Prepare Strawberry Syrup: In a pan, combine the 2 cups of diced strawberries with 3 tablespoons of sugar and a large squeeze of lemon or lime juice. Bring this mixture to a boil, then reduce the heat to just above a simmer. Cook for about 10 minutes, stirring frequently, until the strawberries break down and the mixture thickens into a syrupy consistency.
  3. Cool Syrup: Remove the syrup from heat and let it cool to room temperature. Then place it in the refrigerator until chilled to enhance its refreshing flavor.
  4. Assemble Strawberry Milk: In a glass, add 2-3 tablespoons of the chilled strawberry syrup, pour in ¾ cup of unsweetened non-dairy milk, and add ice cubes. Top the drink with about 1 tablespoon of the macerated strawberries. Stir well to combine all the flavors. Adjust sweetness or strawberry amount as desired.
  5. Storage: Store any remaining strawberry syrup and macerated strawberries in separate airtight containers in the refrigerator for up to 3-4 days.

Notes

  • You can use any unsweetened non-dairy milk such as almond, oat, or coconut depending on your preference.
  • Adjust the amount of sugar and syrup to your taste for a sweeter or less sweet drink.
  • For a thicker milkshake-like texture, blend the assembled drink briefly before serving.
  • Use fresh, ripe strawberries for the best flavor and natural sweetness.
  • The drink is best consumed within 1-2 days for fresh taste.
