Ingredients
Main Ingredients
- 2 tablespoons extra virgin olive oil
- 1 pound free-range extra-lean ground turkey (alternatively, grass-fed ground beef)
- 1 teaspoon garlic clove, minced
- ½ cup onions, diced
- ½ cup yellow pepper, diced
- 1½ cups sweet potato, diced
- Salt and freshly ground black pepper to taste
- A pinch of red chili flakes (optional)
- ½ cup shredded mozzarella cheese (omit if following Whole30 or Paleo diet)
- Fresh parsley for garnishing (optional)
Instructions
- Heat the skillet: In a cast iron skillet, heat the olive oil over medium-high heat until shimmering to prepare for cooking the meat.
- Cook the turkey: Add the ground turkey and minced garlic to the skillet. Use a wooden spoon to break up the meat as it cooks. Stir occasionally, cooking for about 5 minutes until the turkey is browned and cooked through.
- Sauté vegetables: Add diced onions and yellow peppers to the skillet. Cook until the onions soften and become translucent, enhancing the flavor base.
- Add sweet potatoes and seasoning: Stir in the diced sweet potatoes, red chili flakes (if using), salt, and freshly ground black pepper. Mix well to combine all flavors.
- Cook sweet potatoes: Cover the skillet with a lid and cook over medium heat until the sweet potatoes are tender, stirring occasionally. If needed, add a little more olive oil or a splash of water to help the potatoes cook evenly and prevent sticking.
- Preheat oven: While the sweet potatoes cook, preheat your oven to 400ºF (200ºC) to prepare for melting the cheese.
- Add cheese and bake: Once the sweet potatoes are tender, sprinkle shredded mozzarella cheese evenly over the skillet mixture. Transfer the skillet to the preheated oven and bake until the cheese melts and bubbles, about 5 minutes.
- Finish and garnish: Remove the skillet from the oven carefully. Garnish with fresh parsley if desired, and serve hot for a delicious, hearty meal.
Notes
- You can substitute ground turkey with grass-fed ground beef for a richer flavor.
- If following Whole30 or Paleo diets, omit the mozzarella cheese or replace with a compliant cheese alternative.
- Adding a pinch of red chili flakes adds a subtle heat, but feel free to skip or adjust to your spice preference.
- Use a cast iron skillet to ensure even cooking and for oven-safe transfer when melting the cheese.
- Adding a splash of water while cooking sweet potatoes helps speed up the tenderizing process and prevents sticking.
- Fresh parsley is optional but adds a nice fresh garnish and a pop of color.
