- 1/4 cup salted butter, softened
- 1 1/3 cups powdered sugar

Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Grease 36 mini muffin cups thoroughly with cooking spray to prevent sticking during baking.
- Mix Cookie Dough: In the bowl of a stand mixer, beat together the softened butter and sugar until the mixture is smooth and well combined. Then, stir in the egg, vanilla extract, and almond extract if using, mixing until evenly incorporated.
- Add Dry Ingredients: Add the baking powder and all-purpose flour to the wet ingredients. Stir gently until all ingredients are just combined, forming a soft dough.
- Shape Dough: Using rounded tablespoons of dough (about 1 inch in diameter), roll each portion into a ball. Place one ball into each mini muffin cup and flatten slightly with your fingers. There is no need to form a cup shape at this stage.
- Bake Cookies: Bake the cookie dough in the preheated oven for about 10 minutes, or until the edges turn golden brown.
- Form Cookie Cups: Immediately after baking, while cookies are still warm, use the cap of a bottle (such as a vanilla extract bottle cap) to gently press into the center of each cookie to form a cup shape.
- Cool Cookies: Let the cookie cups cool in the pan for 5 minutes, then carefully transfer them to a wire cooling rack to cool completely.
- Prepare Frosting: In the bowl of a stand mixer, beat the softened butter until smooth. Add the powdered sugar and vanilla extract, stirring to combine. Add the milk or heavy cream and beat the mixture until smooth and creamy. Adjust consistency by adding an extra ½ to 1 tablespoon of milk if necessary. Stir in food coloring if desired.
- Fill Cookie Cups: Spoon the frosting into a piping bag or a resealable baggie with the tip snipped off. Pipe the frosting into each cooled cookie cup to fill them completely.
- Add Finishing Touches: Top each frosted cookie cup with sprinkles if desired for a festive look.
