Potatoes
- 2 pounds russet potatoes, peeled and small diced
- 3-4 tablespoons oil

Ground Beef Mixture
- 1 pound ground beef
- 1 packet taco seasoning
- Water, as directed on taco seasoning packet

- 8 ounce bag Mexican shredded cheese

Instructions
- Prepare and season potatoes: Peel and dice 2 pounds of russet potatoes into small pieces. In a large bowl, toss the diced potatoes with 3 to 4 tablespoons of oil, 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder until the potatoes are evenly coated with the seasoning mixture.
- Cook potatoes: Preheat your air fryer to 400°F. Place the seasoned potatoes in the air fryer basket in an even layer. Cook for 18 to 20 minutes, shaking the basket 2 to 3 times during cooking to ensure the potatoes crisp evenly on all sides.
- Cook ground beef: While the potatoes are air frying, heat a skillet over medium-high heat. Add 1 pound of ground beef and cook until browned and crumbled, about 5 to 7 minutes. Drain any excess grease. Add 1 packet of taco seasoning and the amount of water specified on the seasoning packet. Stir and simmer until the sauce thickens and the beef is well seasoned, following the time recommended on the taco seasoning package.
- Assemble dish: Once the potatoes are crispy and cooked, layer them on a serving plate. Top the potatoes with the seasoned ground beef. Sprinkle with an 8-ounce bag of Mexican shredded cheese so it melts over the warm beef and potatoes. Garnish with optional toppings such as pico de gallo, guacamole, and sour cream according to your taste preferences.

- You can substitute russet potatoes with Yukon gold for a creamier texture.
- Adjust the amount of oil to make the potatoes crispier or lighter according to preference.
